Carter-Hoffmann's CH1600 is a full-height stainless steel cook and hold cabinet that precisely cooks to time or temperature settings. This cook and hold cabinet rolls are readily portable thanks to a set of 5" diameter rubber casters. 

This cook and hold cabinet have a forced air heater on top, and it can be adjusted to cook at temperatures between 100- and 375-degrees Fahrenheit. It can then hold at temperatures between 100- and 200-degrees Fahrenheit using independent dial controls and a digital display. This cook-and-hold cabinet has sturdy stainless steel angle slides. It can accommodate up to sixteen 18" x 26" pans, eight in each of the two compartments, and hold about 240 pounds of meat. The cabinet is constructed from welded stainless steel and has high-density fiberglass insulation that is 2 inches thick. This cook and hold cabinet have a double-panel, solid hinged, insulated door that is reversible and has a magnetic latch.
