This full height proofing cabinet comes with a clear polycarbonate door with the ability to store up to (18) 12" x 20" pans. The bottom mount control module is equipped with three control modules with the ability to hold, proof, and do a combination of both. The combination module allows for you quickly change from heat holding to proofing in an instant while providing the ability to control temperature and humidity inside the cabinet. Both the proofing and holding modules have analog controls that allow you to use those functions for setting temperature and humidity. A digital temperture display aids in these processes by allowing you to set and monitor the temperture inside the proofing cabinet. Mobility of this unit is aided by the four 5" casters which can be locked into place when not being transported. This proofer cabinet is constructed from aluminum and is non insulated to provide strength and durability.
