Commercial lava rock charbroilers are the closest thing an indoor cook can get to an outdoor grill.

Lava rock charbroilers produce juicy, charred meats with the grill marks and flavor that will make your customers think it was cooked on an outdoor grill. Above the burners is a bed of ceramic "lava" rocks. They heat up and direct the heat upwards toward the food you're grilling. Because the rock is porous, it collects and keeps drippings, enhancing the aromas by producing more aromatic smoke and flare-ups.

Lava rocks serve the same purpose as metal radiants, by dispersing heat uniformly across the cooking surface of the charbroiler.  Because lava rock charbroilers collect grease and continuously evaporate it to flavor food, they can transmit richer flavors and scents than radiant models. Due to the need to replace the rocks somewhat often, lava rock broilers are more expensive and labor-intensive.

Sizing

Lava rock grills are available in a wide variety of widths. Ranging from as small as 12" wide up to a lengthy 72" floor model charbroiler. The diverse sizing options allow you to find the appropriate size for any kitchen layout. Grill surface depths are also available in different sizes. Depths range between 21" and 36". Be sure to know how much counter space you have available in your kitchen when looking to make a new purchase.

Frequently Asked Questions About Lava Rock Charbroilers

How often should you replace your lava rocks?

Replacing your lava rocks is dependent upon how much grilling you put them through. Since lava rocks catch drippings and grease, they quickly become saturated. This can increase flare ups. Most lava rock grill users will replace their rocks every couple weeks, however, if you are doing a high-volume of grilling or using your charbroiler daily, then you may want to replace them sooner. Try flipping your rocks over every now and then to extend their life a bit longer.
