The griddle's 1" thick polished steel surface offers consistent cooking results. For uniform cooking of numerous foods at once, each 12" segment of the unit's 1" thick polished steel griddle surface has its own temperature control, burner, and standing pilot. Mechanical snap-action thermostats, which use sensors implanted 0.1875" from the cooking surface every 12" for precise temperature control across a 150°F to 550°F working range, are used to regulate the temperature. Because of the rear and side splash shields, as well as the grease trough, this Star gas griddle is simple to clean.
