What is a Rethermalizer?

A rethermalizer is made to heat frozen meals up to a food-safe temperature as quickly as possible, as opposed to a food warmer, which maintains heated foods at hot temperatures. The main difference between a rethermalizer and a food warmer, is that a rethermalizer helps bring foods through the HACCP temperature “danger zone,” which is between 41⁰F and 135⁰F. At these temperatures bacteria is more likely to contaminate foods.

Many of these units, like the Vollrath Cayenne models, can reheat chilled goods to over 165°F, then switch to a warming mode where it will hold foods at ideal serving temperatures. They are commonly used to heat up frozen prepared items, like soups and vegetables, however, they can also defrost raw meat as long as it is sealed in packaging.
