Frequently Asked Questions About Refrigerated Prep Tables

What's the difference between a pizza prep table and a sandwich prep table?

Both of these units allow you to configure pans in a refrigerated rail to serve. The main difference between a pizza prep table and a sandwich prep table, is that pizza prep tables feature a raised rail and wider cutting board. This prevents cross contamination when assembling, and provides a prep space large enough for pizzas. Pizza prep tables also typically are set up to hold 1/3 size food pans since ingredients for pizzas tend to be heavier and used in greater volume. Sandwich prep tables will often come with or be configured to hold 1/6 size food pans to better suit sandwich/salad assembly needs. They can hold different size pans, however, with the use of adapter bars. The rail of a sandwich prep table will often feature recessed pan options for improved cold-holding performance.

How to determine what size refrigerated prep table is best?

The two main measurements for refrigerated prep tables are width, and pan capacity. The smallest models will be 27" wide, but Burkett carries options up to 72" wide. Wider units hold more food pans and house more storage space in the bottom refrigerated compartments. Consider your available space to determine width, and how many ingredients you'll be using at once to choose pan capacity.

Doors or drawers?

One of the great benefits of having a pizza or sandwich prep table is the ability to store back-up product in the same space as your assembly area. Pizza and sandwich prep tables come with either door access, usually with some kind of wire shelving system, or drawers that hold pans of food. Some units will even have a combination of both types of access. Doors allow you to configure and stack your back up product however makes the most sense for your kitchen. They can hold however many pans you can reasonably fit inside. Drawers provide more of a structured organizational system. Check each unit's specifications to find the cubic feet (doors) or pan capacity (drawers) of their storage space.

What's the difference between cold wall and forced air cooling?

Forced air systems blow cooled air over food pans to keep them cold. This type of system is common for salad and sandwich prep tables since they usually hold vegetables and other ingredients that could easily dry out if left sitting too long. A cold wall system has tubes that are installed directly into the interior walls so that the cooling is spread evenly. This system is great for pizza prep tables since it can keep heavier, dense ingredients like meats, cheese, and sauces properly cooled.

Other Refrigeration Options

In addition to a refrigerated prep table, other convenient refrigeration options for the cold food storage needs of any busy commercial kitchen include undercounter refrigerators, worktop refrigerators, and reach-in refrigerators.
