The griddle's 1" thick polished steel top offers consistent cooking results. On the unit's 1" thick polished steel griddle surface, each 12" area has its own temperature control, burner, and standing pilot for even cooking of a variety of items at the same time. Mechanical snap-action thermostats, which use sensors inserted 0.1875" from the cooking surface every 12" for precise temperature control across a 150°F to 550°F operational range, are used to control the temperature.
