A -40°F to 50°F range with dedicated soft chill, soft freeze, hard freeze, thawing, and holding modes moves product safely through the danger zone while preserving texture.
Direct every cycle from a 7" digital touchscreen with HACCP data tracker, while a multi-core probe with four reading points verifies core temperatures. End-of-cycle hold maintains conditions until staff can unload, and a self-closing door with 105° stop supports fast staging on busy lines. UV sterilizer, auto-defrost, and an epoxy-coated sealed evaporator minimize manual intervention.
Chill braises and sauces for rapid storage, hard-freeze pastries and proteins, or thaw under precise control before prep. Load pans on interior side racks and position the cabinet where you need it on locking casters to keep workflow moving.
