Engineered to move more plates faster, the Blodgett INVOQ 61BE/61BE-PT is a double-stack pass-thru electric combi oven steamer built for high-volume production and tight workflows. With capacity for ten 12" x 20" hotel pans or two banks of five full-size 18" x 26" sheet pans using the MultiRack option, it streamlines batch cooking from prep to service.
Drive consistency with touch screen controls, SmartChef, MenuPlanner, and CombiSpeed/CombiSense that store up to 1,500 recipes and guide operators. An external temperature probe, Delta-T, and Cook & Hold help you hit target doneness across mixed loads—ideal for roasting proteins, finishing vegetables, or retherming banquets.
HybridSteam (injection + boiler) delivers the right moisture for baking, steaming, and combi applications, while a triple-pane glass door protects staff from heat. Daily care is simplified by the built-in hand shower and automated CareCycle with deliming, HACCP records, and a USB port for quick updates. A stainless steel interior and exterior with ENERGY STAR efficiency suits demanding commercial kitchens.
