Drive consistent proofing and hot holding with the Vulcan VP18-QS-PLATINUM mobile cabinet. This non-insulated Quick Ship unit accommodates up to 18 full-size sheet pans or 36 12" x 20" steam table pans for batch production. A fan-driven air tunnel circulates heat evenly to every level.
Match your workflow by switching from proof to heated holding up to 190°F with a single control. The full-view glass door helps crews check progress without opening the cabinet, preserving temperature and humidity. Adjustable tray slides on 3" centers accept a range of items and pan depths.
Maintain moisture with the 1/2 gallon water pan, and keep floors cleaner with the integrated drip trough and removable drip pan. Roll between prep, bake, and service on 5" casters, then lock for stable loading. Powered by 120V/50/60/1-ph, 2.0 kW with a NEMA 5-20P plug, the stainless steel construction stands up to daily use.
