Product Description
Streamline dough development and holding with the Metro C517-PFC-U, a C5 1 Series proofing cabinet built for busy kitchens. The mobile, 3/4-height, non-insulated aluminum design supports temperatures up to 120°F, while a clear polycarbonate door enables quick checks without opening.
Stage varied batches with universal wire slides on 3-inch centers, adjustable in 1-1/2-inch increments. Fit either (14) 18" x 26" sheet pans or (26) 12" x 20" x 2-1/2" pans to proof breads, rolls, pastries, and par-baked items for bakeries, banquets, and commissaries.
A removable bottom-mount control module simplifies cleaning and service, and 5-inch casters (two with brakes) move easily from prep to bake lines or banquet spaces. Plug into 120V/60/1-ph power (1440W, 12A) with a NEMA 5-15P for reliable performance verified by cULus and NSF.
