Engineered for high-volume kitchens, the Atosa ATHC-18P insulated proofer/heated cabinet helps you manage hot holding and proofing with accuracy and speed. It accommodates up to eighteen 18" x 26" sheet pans in a compact 25-inch-wide footprint, keeping production organized without crowding the line. Dial controls and an LED display make it easy for staff to set and verify conditions at a glance.
Toggle between heating and proofing modes to match your workflow. Hold cooked items at 80°F–220°F for banquets or service windows, or select from 10 humidity levels to proof dough uniformly before baking. A transparent polycarbonate door with a stay-open feature accelerates loading and lets you monitor contents without disrupting operations.
The insulated cabinet design helps maintain set temperatures and humidity, supporting consistency through frequent door openings. Use it to stage trays for catering, back up the pass during rushes, or standardize proofing
