Deliver repeatable results with 240,000 BTU and a 300°F–650°F range that adapts from par-bake to finish-fire service. A cordierite brick-lined ceiling and 2" Lightstone FibraMent hearth store heat for fast recovery and even browning across the deck. Independently controlled top and bottom dampers let chefs tune char and crumb to style.
Built for the line, the stainless steel exterior, aluminized interior, and full insulation support steady temps between turns. Spring-balanced, insulated doors retain heat and speed loading, while the 7.5" deck height accepts large pies and sheeted doughs. A left-side or rear 3/4" NPT gas connection simplifies placement in tight cooklines.
