Independent compartments let teams cook multiple menu streams—roast, steam, or retherm—without creating bottlenecks. Each compartment handles (14) 12" x 20" full size hotel pans or (7) 18" x 26" full size sheet pans, streamlining batch work for banquets and tray lines. Thirteen rack positions per cavity help you fine-tune load density for delicate vegetables, proteins, or bulk sides. A 4-speed fan and core temperature probe deliver even circulation and precise finish temps across mixed loads.
Operators dial in moisture with Steam-on-Demand and Vario Steam® to enhance yield, color, and texture. A Time to Delime indicator simplifies care planning, while the glass door maintains visibility without opening the cavity. Low-profile 4" casters and a retractable hose reel make cleaning, positioning, and service access straightforward.
