The Blodgett INVOQ 101BLE-PT electric, boilerless pass-thru combi oven steamer helps busy kitchens move from prep to plate with speed and consistency. With capacity for (10) 12" x 20" hotel pans—or (7) full size 18" x 26" sheet pans using the MultiRack option—it supports high-volume roasting, steaming, and combi cooking on a single platform. Operators can standardize results across shifts with multiple cooking modes tailored to demanding menus.
The pass-thru design streamlines workflow by allowing loading from the production side and unloading to plating or service, ideal for traylines, banquets, and back-of-house to front-of-house handoffs. Touch screen controls with SmartChef and MenuPlanner simplify execution and store up to 1,500 recipes, making repeatable quality easier for teams of any size.
Injection steam, an external temperature probe, Delta‑T cooking, and Cook & Hold support delicate proteins, bulk vegetables, and overnight braises. Daily tasks stay efficient with a built-in hand shower, automated CareCycle with deliming, and heat protection from a triple‑pane glass door, all within a durable stainless steel interior and exterior.
