The Comstock-Castle 2B26N gas deck oven streamlines high-volume baking with a compact 31-inch-wide frame and two 14-inch-high sections. Chefs can stage multiple batches on four wire racks measuring 26.5 inches wide by 21 inches deep, helping keep production moving during peak service. Durable construction supports rigorous daily use in bakeries, restaurants, and commissaries.
Dial in consistent results with a 150°F–550°F thermostat and integrated safety shut-off. Roast proteins on one level while baking breads, pastries, or casseroles on the other to organize workflow and reduce bottlenecks. A stainless steel exterior and porcelain/aluminized linings make cleanup straightforward between turns.
