The Comstock-Castle FSU318 step-up gas range drives throughput with four 24,000 BTU star burners and 12" x 12" cast iron grates. Its step-up layout improves visibility and access to rear pans, streamlining searing, sautéing, and simmering during peak service. With 121,000 BTU total output, it supports high-volume production without slowing the line.
A 19-1/2" wide oven with enamel and aluminized lining helps maintain even heat and simplifies cleanup between turns. One rack with three positions adapts to roasting proteins, finishing casseroles, or baking sides as tickets stack up. Operators can stage batches efficiently while keeping cook times consistent.
The stainless steel exterior stands up to daily wear while presenting a clean, professional look on the cookline. A back riser and high shelf keep essentials within reach, and 6" stainless steel legs make it easy to level and clean under the unit.
