Stage high-volume mise en place across (18) 1/6-size, 4-inch-deep pans beneath a 12-inch cutting board for fast assembly of sandwiches, salads, and wraps. Six drawers speed replenishment and can be configured per drawer for one 12 x 18 x 6 pan or a 1/2 x 6 plus 1/3 x 6 pan (pans supplied by others).
