Forced-air refrigeration moves cold evenly across the rail and cabinet for reliable holding during peak demand.
A durable 300 series stainless steel work top with a 19-inch poly cutting board creates a spacious, sanitary prep surface for stretching, topping, and finishing pies. Four refrigerated drawers organize toppings in standard 12 x 20 x 6 pans (supplied by others), while a half-height, field rehingeable door offers quick access to bulk items.
Side-mounted refrigeration and a reversing condenser fan support serviceability and consistent performance in tight kitchens. Electronic controls make temperature adjustments straightforward, and a hot gas condensate evaporator efficiently handles condensate. R
