Stage proteins, toppings, and backups efficiently using six refrigerated drawers: top drawers accept one 12" x 20" pan plus three 1/6 pans each, while bottom drawers hold two 12" x 20" pans apiece. A half-height, field-rehingeable door adds quick access for bulk items or high-turn condiments. Electronic controls, off-cycle defrost, and a side-mounted R290 system help maintain dependable holding temperatures during rushes.
