It accommodates (10) 18" x 26" sheet pans or (20) 12" x 20" x 1" hotel pans, streamlining batch cooking for banquets, cafeterias, and commissaries. Roast, steam, combi-steam, or retherm with confidence while keeping pace on the line.
Speed up workflow with easyDial programmable controls and a clear digital display, featuring 9-stage cooking and storage for 99 recipes. A multi-point core temperature probe and five-speed auto reversing fan help ensure even results and doneness across full loads. Use hot air for crisp finishes, steam for delicate vegetables, and combi-steam to retain moisture on proteins.
