This gas, boilerless unit accommodates ten 18" x 26" sheet pans or twenty 12" x 20" x 1" hotel pans to handle roasting, steaming, and banquet retherm with ease. easyDial programmable controls with a digital display simplify workflows and keep teams synchronized.
Four cooking modes—hot air, steam, combi-steam, and retherm—pair with a multi-point core temperature probe for precise doneness across proteins and vegetables. A five-speed auto reversing fan promotes even airflow, while stainless steel construction stands up to daily service.
Speed up changeovers with ConvoClean+ fully automatic, hands-free cleaning and a pull-out spray hose, and maintain hygiene with the anti-microbial door handle. Build repeatable programs using 9-stage cooking and storage for 99 recipes to support multi-site standards. With 109,200 BTU gas power plus a 120v connection, this ENERGY STAR unit supports performance and efficiency.
