This granite cold slab holds plated desserts, sushi, salads, and chilled mise en place at the point of service, elevating visual appeal while preserving texture. Built with stainless steel and granite and paired with a thermal mastic heat transfer compound, it pulls cold efficiently across the surface. A 1.5" deep perimeter trough and 3/4" stainless steel drain capture melt and condensate to keep counters clean and service moving. Operators can stage plates or pans for quick turns during peak periods.
The self-contained 1/2 hp refrigeration system with 404A refrigerant simplifies installation and service. An on/off switch provides straightforward control, and the unit drops into a 72-3/8" x 25" cutout for a clean, built-in look.
