The Doyon E236 roll-in proofer cabinet streamlines high-volume dough prep with a two-section layout designed for flexible staging. One side accepts a single roll-in rack while the other provides ten shelves at 2-1/2" centers to organize batches and manage timing.
Solid-state heat and humidity controls let chefs set and maintain consistent proofing conditions for breads, pastries, and par-baked items. Automatic water entry simplifies operation and reduces manual handling during peak production.
Full-view glass doors help staff monitor progress without repeatedly opening the cabinet, preserving the environment and workflow. Built with a stainless steel interior and exterior and an aluminum floor, the E236 stands up to daily commercial use and supports smooth rack loading.
