The Doyon KDP21 knockdown proofer cabinet is a two-section roll-in proofer designed for busy bakeries, commissaries, and institutional kitchens. It accepts up to (2) double side load racks, (3) single end load racks, or (4) single side load racks to keep multiple recipes moving on schedule. Roll in loaded racks and stage large batches without reshuffling production space.
A single digital touchscreen control manages both sections, helping chefs and operators set, monitor, and repeat proofing routines with consistency. The single water line and auto fill humidity streamline plumbing and reduce manual intervention. Insulated panels help maintain stable conditions from load to load.
