Keep dough development and hot holding on schedule with the FWE ETC-UA-10PH, a mobile proofing cabinet engineered for busy commercial kitchens. Its humidified proofer/heating system pairs an adjustable thermostat with separate controls for precise, repeatable results. Durable stainless steel inside and out stands up to daily use.
Accommodate (10) 18" x 26" sheet pans or (20) 12" x 20" trays on universal slides set 4-1/2" on center and adjustable in 1-1/2" increments. A removable water reservoir simplifies humidity management and cleanup. An insulated door complements the non-insulated cabinet design.
Move from prep to bake to service with 5" casters—two rigid and two swivel with brakes—and a recessed hand grip for safe maneuvering. Ideal for bakeries, restaurants, caterers, and institutions staging breads, pastries, or holding sides at temperature before plating.
