The FWE PH-1826-14 heated holding proofing cabinet streamlines staging, proofing, and service in compact kitchens. Its undercounter, mobile design slides into tight spaces and moves wherever production demands. A built-in humidifier with individual temperature and moisture controls helps you maintain ideal conditions from prep to pass.
Accommodate changing menus with (10) adjustable tray slide pairs set 4-1/2" on-center, holding either (10) 18" x 26" sheet pans or (10) 12" x 20" pans. Dual doors with recessed antimicrobial handles support frequent access while promoting hygiene. The stainless steel interior and exterior stand up to daily, high-volume use.
Speed up workflow with a removable water reservoir for fast refills and cleaning. Recessed side hand grips and 3-1/2" swivel casters with brakes make positioning secure on the line or in the bakery. Use it to proof dough, hold roasted proteins, or stage plated meals during rush periods.
