The FWE PH-1826-18 is a full-height, mobile proofer/heated holding cabinet engineered for high-volume service. Keep batches at peak quality from prep to plating while streamlining cook-and-hold workflows across banquets, bakeries, and institutional kitchens.
A built-in humidifier and removable water reservoir pair with individual temperature and moisture controls to dial in exact conditions. Twelve pairs of adjustable tray slides, set 4-1/2 inches on center, accommodate either (12) 18" x 26" sheet pans or (12) 12" x 20" pans. Proof dough, hold roasted proteins, or stage plated meals without drying out.
Durable stainless steel inside and out stands up to daily use, and a field-reversible door with a recessed antimicrobial handle supports flexible layouts and hygiene. Roll effortlessly between stations on 5" casters with recessed side hand grips for safe maneuvering.
