The FWE PH-1826-7-7 heated holding proofing cabinet streamlines back-of-house flow with a full-height, split-cavity design. Run separate temperature and humidity levels to proof dough on one side while holding finished dishes on the other. Insulated construction helps maintain set conditions as you move from prep to service.
Equip your line or banquet area with flexible capacity. Each compartment accepts five 18 x 26 sheet pans or five 12 x 20 pans on adjustable slides spaced 4-1/2 inches on center, so you can tailor clearances for breads, proteins, and plated items. A built-in humidifier with removable water reservoir supports consistent moisture management.
Operators will appreciate the field reversible doors with recessed antimicrobial handles, plus recessed side hand grips and 5-inch casters for smooth mobility. Stainless steel interior and exterior stand up to daily cleaning. Individual temperature and moisture controls make it easy for chefs and managers to hit quality targets across diverse menus.
