Designed for busy commercial kitchens, this mobile unit helps you proof, stage, and hold menu items with consistent moisture and heat. Stainless steel construction and insulation support temperature stability during service and transport.
Accommodate changing production needs with (10) pairs of universal tray slides that accept (10) 18" x 26" sheet pans or (20) 12" x 20" pans. Slide spacing is 4-1/2" on center and adjusts on 1-1/2" increments, letting you fit taller products or maximize capacity. A flush-mounted door enhances workflow in tight spaces.
Dial in results using the humidified proofer/heating system, adjustable thermostat, and individual proofer controls. A removable water reservoir simplifies filling and cleaning, while 5" casters (two rigid, two swivel with brakes) deliver smooth mobility for banquets, catering routes, or back-of-house staging. This proofing cabinet supports efficient production, presentation, and service.
