Stage bulk items behind the door on two adjustable shelves while loading the drawers with ready-to-use mise en place—each drawer accommodates one 12 x 10 x 6-inch pan and two 1/4 pans (pans by others). A self-contained, side-mounted refrigeration system streamlines installation and service access, while hot gas condensate removal supports efficient operation throughout the day.
