Standing pilot lights and cast iron grates help crews turn tickets quickly, and the low simmer feature supports delicate reductions and sauces without scorching. The griddle’s 3/4-inch polished steel plate and 20,000 BTU burner deliver responsive heat for eggs, burgers, or searing proteins.
