Griddle across a broad 3/4-inch polished steel plate and move grease quickly through the 3-inch trough to the removable pan and crumb tray for efficient turnarounds. Use the open burners’ low simmer feature for delicate reductions while cast iron grates support heavy pots. Finish batches in the convection ovens for consistent results across multiple racks.
Built for the demands of busy kitchens, this unit features stainless steel front, sides, backguard, and shelf, plus porcelain oven interiors and chrome racks. Each oven is powered by a 1/2 HP blower motor to keep production moving, while the 224,000 BTU (66 kW) total output handles everything from breakfast to late-night service. Adjustable 6-inch legs help level and align the range on any line.
