Power through busy service with the Metro C5 3 Series C535-CFS-U heated holding & proofing cabinet. This half-height, insulated aluminum unit with Red Insulation Armour™ preserves heat while freeing up valuable floor space, making it ideal for staging plates, holding roasted proteins, or proofing dough between bakes.
Dial in consistent results using the removable bottom-mount control module and a thermostat adjustable to 200°F. Universal wire slides on 3" centers adjust in 1-1/2" increments to fit (8) 18" x 26" sheet pans or (16) 12" x 20" x 2-1/2" hotel pans, streamlining changeovers across dayparts.
Roll from prep to pass with 5" casters, then lock two brakes for steady plating or proofing. From banquets and off-site catering to high-volume lines, this mobile cabinet helps maintain product quality and pace without disrupting workflow.
