Drive service speed and food quality with the Metro C5 3 Series C535-MFS-U, a half-height, moisture heated holding & proofing cabinet built for active kitchens. Its insulated aluminum cabinet and Red Insulation Armour help protect against bumps while maintaining consistent conditions during rushes. Use it to stage plated entrées, hold sides at temperature, or proof dough between batches.
Dial in heat up to 200°F and modulate humidity with the removable, bottom-mount control module for precise results. Adjust the universal wire slides on 1-1/2" increments to configure space for (8) 18" x 26" sheet pans or (16) 12" x 20" x 2-1/2" pans.
Roll it anywhere you need it on 5" casters, then lock two brakes to keep service flowing safely. The mobile, half-height format streamlines workflow at the cookline, banquets, and catering stations.
