The Metro C5 3 Series C537-CFC-U heated holding & proofing cabinet brings reliable temperature control and flexible capacity to busy kitchens in a compact, 3/4-height mobile design. Its insulated Red Insulation Armour™ and durable aluminum construction support consistent performance through demanding service. A clear polycarbonate door allows quick visual checks without opening the cabinet.
Stage sheet pans or hotel pans with universal wire slides on 3" centers, adjustable on 1-1/2" increments to fit (14) 18" x 26" or (26) 12" x 20" x 2-1/2" pans. Set the removable bottom-mount control module up to 200°F to hold entrees for banquets, keep sides hot on the line, or proof dough between bakes. Move effortlessly between prep, cook, and service areas on 5" casters, then secure with the two locking brakes.
