The Metro C5 3 Series C537-CLFC-U is a mobile heated holding and proofing cabinet designed to keep service moving in high-volume kitchens. Its lower-wattage, insulated 3/4-height build supports efficient staging from prep to pass. Red Insulation Armour adds a protective exterior suited for demanding operations.
Dial in the removable bottom-mount control module up to 200°F to match menu needs—from gentle dough proofing to hot holding. A clear polycarbonate door lets staff monitor trays without opening the cabinet, helping maintain cabinet conditions.
Universal wire slides on 3" centers adjust in 1-1/2" increments to fit (14) 18" x 26" or (26) 12" x 20" x 2-1/2" pans. Smooth-rolling 5" casters, two with brakes, make it easy to position the cabinet line-side, in banquets, or for catering staging.
