The Metro C539-CDS-U is a full-height, mobile heated holding & proofing cabinet built to keep production moving in high-volume kitchens. Insulated construction and Red Insulation Armour™ help safeguard temperatures and the exterior in demanding back-of-house environments.
Universal wire slides on 3" centers adjust in 1.5" increments to fit changing menus, holding (18) 18" x 26" sheet pans or (34) 12" x 20" x 2.5" pans. Dutch insulated aluminum doors let staff access one section while limiting heat loss—ideal for staged service and banquets. A removable bottom-mount control module with a thermostat to 200°F streamlines maintenance and precise holding.
