Engineered for busy kitchens, the Metro C539-MDC-U is a full-height, mobile heated holding & proofing cabinet that helps you pace service without sacrificing timing. Red Insulation Armour surrounds an insulated aluminum cabinet to retain heat during transport and staging. A removable bottom-mount control module lets you set temperatures up to 200°F with moisture to hold or proof as needed.
Streamline banquet plating, bakery production, and tray lines with flexible pan compatibility. Universal wire slides accept 18 full-size 18" x 26" sheet pans or 34 12" x 20" x 2-1/2" pans, and adjust on 1-1/2" increments to fit changing menu items. Dutch clear polycarbonate doors deliver quick product visibility to minimize heat loss during checks.
