The Metro C5 3 Series C539-MFC-U is a mobile, full-height heated holding & proofing cabinet engineered to streamline service in busy kitchens. Maintain precise heat and moisture to keep entrees at serving temperature or proof dough with consistency across the line. It’s an efficient choice for banquets, bakeries, catering routes, and high-volume operations.
Dial in conditions with a removable bottom-mount control module featuring a thermostat up to 200°F and moisture control. A clear polycarbonate door lets staff confirm pan status without opening the cabinet, helping preserve interior conditions. Universal wire slides adjust on 1-1/2" increments to fit (18) 18" x 26" sheet pans or (34) 12" x 20" x 2-1/2" pans for flexible menu staging.
