Keep menu items hot, fresh, and ready to plate with the Metro C539-MFS-U heated holding and proofing cabinet. Moisture control and a thermostat to 200°F let you dial in the ideal environment for breads, proteins, and sides. Use it to stage banquets, back up the cookline, or proof dough without tying up the oven.
Universal wire slides accept (18) 18" x 26" sheet pans or (34) 12" x 20" x 2-1/2" pans, so you can swap pans as production changes. Slides are on 3" centers and adjust on 1-1/2" increments to optimize airflow and capacity. The insulated aluminum cabinet and door with Red Insulation Armour help maintain temperatures between stations.
A removable bottom-mount control module speeds cleaning and service. Roll the full-height cabinet wherever it’s needed on 5" casters, then lock two brakes for secure staging. Powered by 120V/60/1, 2000 watts with a NEMA 5-20P, it fits typical kitchen power for mobile holding.
