Engineered for demanding service, the Metro C597L-SFC-U is a mobile, 3/4-height controlled humidity heated holding & proofing cabinet from the C5 9 Series. It keeps trays of entrées, sides, and baked goods at quality while the clear double panel tempered glass door lets staff verify load status without opening. The compact profile parks easily on the line, at the pass, or in banquet staging areas.
Universal wire slides accept (13) 18" x 26" sheet pans or (26) 12" x 20" x 2-1/2" pans. Slide spacing is 3" OC and adjustable on 1-1/2" increments, so you can reconfigure for tall roasts, stacked hotel pans, or proofing trays in seconds. Use it to proof dinner rolls before service, hold carved proteins for stations, or stage plated desserts for banquets.
Durable stainless steel construction stands up to daily wear, while a polymer bumper & drip trough combination helps protect surroundings and manage condensation. Smooth-rolling 5" casters make repositioning quick during prep
