Streamline holding and proofing across the line with the Metro C597L-SFS-U, a C5 9 Series controlled humidity heated holding & proofing cabinet built for busy foodservice. The 3/4-height, mobile design maneuvers through tight spaces while delivering consistent results between stations. Load up to (13) 18" x 26" sheet pans or (26) 12" x 20" x 2-1/2" pans to stage batches for service or proof dough right where you need it.
Optimize workflow using universal wire slides set on 3" centers and adjustable on 1-1/2" increments to fit changing menus. An insulated solid door helps retain heat and moisture, while stainless steel construction stands up to daily use. A polymer bumper and integrated drip trough help protect surroundings and manage condensation during transport.
