Engineered for busy kitchens, the Metro C599L-SDS-U controlled humidity heated holding & proofing cabinet keeps food service-ready and dough on schedule. Its full-height, mobile design streamlines workflow between prep, cookline, and service. Insulated solid Dutch doors help retain heat and moisture to support consistent results and faster recovery.
Universal wire slides accept (17) 18" x 26" sheet pans or (34) 12" x 20" x 2-1/2" pans, giving you flexible storage for entrées, sides, and baked goods. Slides are set 3" on center and adjust in 1-1/2" increments, so you can reconfigure for tall items or dense loads without tools.
Durable stainless steel construction stands up to daily use, while 5" casters roll smoothly and a polymer bumper with drip trough protects surroundings and manages condensation. Plug in with the 120V, 1440W, 12A NEMA 5-15P connection for easy placement. ENERGY STAR®, cULus, and NSF compliance supports efficiency and professional standards.
