Handle volume with confidence: the oven accommodates (3) 18" x 26" sheet pans or (6) 13" x 18" pans, while the proofer holds (9) 18" x 26" or (18) 13" x 18" pans. Separate heat and humidity controls on the proofer make dialing in dough development simple for bakeries, cafeterias, and high-volume prep.
