The convection oven with battery spark ignition bakes and roasts evenly and includes three racks for flexible loading. Standing pilots and standard grates support fast, repeatable turns during peak service. Use the 22-1/2-inch flue riser shelf to stage platters, spices, or smallwares for efficient plating.
