Its pan rail accommodates fifteen 1/3-size pans beneath stainless steel, foam-insulated flat lids to maintain 33–41°F ingredients. Four storage doors below include two PVC-coated wire shelves per section for organized backup inventory. Spanning the full length, a removable 19.5" deep by 119.25" wide white polyethylene cutting board delivers a sanitary, durable work surface.
