The 19.5-inch-deep, removable white polyethylene cutting board spans the full width for generous workspace, while fifteen included 1/3-size pans organize toppings beneath stainless steel, foam-insulated flat lids that help lock in freshness. A self-contained refrigeration system with eco-friendly R290 hydrocarbon refrigerant maintains a 33–41°F pan rail and meets NSF/ANSI Standard 7 for open food product. Below, three door sections with two PVC-coated wire shelves per section plus two drawers provide flexible refrigerated storage for dough, sauces, and backup ingredients.
