A self-contained, forced-air refrigeration system with environmentally friendly R290 refrigerant maintains 33°F to 41°F (0.5°C to 5°C) to keep ingredients at ideal holding temps. The all stainless-steel front, top, and ends pair with a corrosion-resistant GalFan coated steel back for durability in high-demand operations. A full-length, 11-3/4 inch removable cutting board provides a sturdy, easy-to-clean workspace, while the stainless steel, foam-insulated lid and hood help keep pan temperatures colder, lock in freshness, and minimize condensation. Heavy-duty PVC-coated wire shelves support organized storage, and the unit accommodates 18 sixth-size pans for efficient ingredient access.
