At 60 inches wide, it combines a 9-1/2 inch deep, 1/2 inch thick high-density polyethylene cutting board with capacity for 24 one-sixth size pans to keep ingredients organized and within reach. A self-cleaning condenser uses a fine mesh filter and rotating brush to help reduce maintenance by clearing dust and debris daily. The cold bunker system forms a cold air shield around the pans, maintaining 33°F to 39°F even with frequent lid openings.
